A Nourishing Twist on a Classic Favourite
When winter sets in across South Africa, nothing warms the soul quite like a hearty bowl of soup. This Honeybush-Infused Butternut Soup combines the comforting creaminess of roasted butternut with the subtle floral sweetness of Honeybush tea — a unique and nourishing spin on a timeless classic.

🍵 Ingredients:

1 large butternut squash, peeled and cubed

1 onion, chopped

2 cloves garlic, minced

2 cups vegetable stock

1 cup strong Honeybush tea (steeped for at least 10 mins)

1 tsp fresh grated ginger

1/2 tsp ground cinnamon

Salt and pepper to taste

2 tbsp olive oil

Optional: A swirl of coconut cream or bread croutons and parsley for serving
🥄 Method:
– Preheat your oven to 200°C.
– Place the cubed butternut on a baking tray, drizzle with olive oil, and roast for 30–40 minutes until tender and caramelised.
– In a large pot, sauté the chopped onion and garlic in a little olive oil until soft. Add the ginger, cinnamon, and roasted butternut.
– Pour in the vegetable stock and Honeybush tea. Bring to a simmer for about 10 minutes.
– Blend until smooth using a stick blender or food processor. Season with salt and pepper to taste.
– Serve warm, with a dollop of coconut cream or bread croutons and a sprinkle of fresh herbs if desired.
